Bread Rolls:
Bread rolls are a versatile food item and can be enjoyed on their own, as a side dish, or used to make sandwiches. They are a popular and traditional part of many cuisines around the world.
Ingredients:
- 8 – Bread Slices
- 3-4 medium- Potatoes (boiled, Peeled and mashed)
- 1 medium – finely chopped onion.
- 3-4 finely chopped Green Chilies
- 1/4 cup- Cottage cheese or grated paneer
- 2 tablespoons – finely chopped fresh coriander leaves.
- 3-4 tablespoons, crushed peanuts
- Salt to taste
- 3/4 cup Corn flour
- Oil for deep-frying.
- 1 medium-thin-sliced tomato
- few fresh mint leaves.
Cooking Instructions:
- In a container or bowl Mix all the potatoes, onions, green chilies, cottage cheese or paneer, coriander leaves, peanuts, and salt, mix them well, and give them even sized rolls.
- Mix corn flour and enough water to make a thick batter.
- Cut the edges of the bread slices with the knife, dip the bread slices in water, do not break them, squeeze them, and drain all the water. Place a potato roll in the center of each slice, make a ball size shape, roll, and seal the edges.
- Heat the oil in a pan, dip the bread rolls in the corn flour batter, and deep fry till golden brown in the hot oil. and keep it aside on a piece of butter paper.
- Fry the remaining trimmed edges of the bread slice and keep it on paper.
- On a serving plate, transfer the fried edges of the bread and serve the bread rolls on top of them. Garnish with tomato slices and mint leaves and serve hot.
Green Chutney:
Ingredients:
- 1 cup fresh coriander (cilantro) leaves washed and chopped.
- 1/2 cup fresh mint leaves, washed.
- 1-2 green chilies, chopped (adjust based on your spice preference)
- 1 clove of garlic, peeled.
- 1 tablespoon roasted peanuts or cashews (optional)
- 1 tablespoon lemon juice
- Salt to taste
- Water, as needed.
Instructions:
- In a blender or food processor, combine coriander leaves, mint leaves, green chilies, garlic, and peanuts (if using).
- Add lemon juice and a pinch of salt to the mixture.
- Blend the ingredients, adding a little water at a time, until you achieve a smooth and thick consistency. Adjust the salt and lemon juice according to your taste.
- Once the chutney is well blended, transfer it to a bowl.
- Taste and adjust the seasoning if needed. If you prefer a spicier chutney, you can add more green chilies.
- Serve the green chutney alongside your freshly baked bread rolls. It can be used as a dipping sauce or spread on the rolls for added flavor.
